For our first Christmas, my in-laws bought us a cookbook that is called, Cooking for Two. From the title you can tell it was especially for newlywed couples who are just starting out. It was a very sweet gift full of very good recipes! One of them, zucchini casserole, has become a favorite. It is full of veggies and would be a great dish for Meatless Mondays!
You can cut the recipe in half if you’d like. We wanted to make enough for leftovers so we doubled the original recipe.
2 cups zucchini
1/2 cup chopped onion
1/2 cup chopped carrots
1 can cream of chicken soup
1 cup cheese
2/3 cup sour cream
2 boxes chicken stuffing mix
First, steam the veggies until they are tender but still kind of firm.
In a small casserole dish, combine the soup, sour cream, and cheese.
Drain the veggies. (You can use this drained water to make the stuffing)
Prepare the stuffing according to the package directions. Stir the veggies into the cheese, sour cream, and soup mix.
Spread the stuffing on the top and add just a little bit of water on top.
Bake at 350 for 30 minutes.
This dish was yummy and we hope you enjoy it! Make any changes that you would like. You could even add different veggies to your liking!
